Lever brewing group for maximum control

Brewing of your espresso coffee is controlled by the pressure of force applied to the lever. Press the lever with more force for more extraction pressure; want a slower extraction, lower the lever a little slower. Lever extraction gives you great control over the rate and pressure of extraction allowing you to produce amazing amounts of tasty crema. A truly rewarding experience.

Excellent thermal stability

Brass group head, brass filter holder, and metal brew piston delivers thermal stability to make sure your espresso extracts at the right temperature.

Chromed brass 51mm double filter-holder for thermal stability

Filter-holder is constructed from chromed brass, just like a commercial espresso machine, to retain heat and maximise thermal stability. Chromed brass helps to maximise and retain the quality of coffee crema by maintaining adequate heat within the filter-holder, where the coffee extraction or brewing occurs. 

Uniform extraction from piston brewing system

Unlike a pump driven espresso machine, the La Pavoni lever system uses a piston to force a "cylinder" of water through the compressed cake of ground coffee beans resulting in a more even exploitation of the coffee.

Pre-infusion

Lifting the lever to the maximum height allows water to fill the brewing system and slowly saturate the ground coffee beans with water - this begins the brewing process under low pressure - known as pre-infusion. The longer you leave the lever up - the longer the pre-infusion. For extra infusion lower the lever about 1/4 of its range - then lift the lever again to the maximum height to completely prime the brew group. As the lever is lowered pre-infusion continues as the brew pressure increases - when brew pressure overcomes the resistance of the compressed coffee brewing begins and delicious espresso begins to flow.

Progressive infusion

As the lever is lowered the brew pressure progressively increases until it overwhelms the compressed coffee cake and espresso begins to flow. Unlike many pump driven espresso machines that go from 0% to 100% pressure very quickly, LA PAVONI lever machine slowly and gently builds extraction pressure for a smooth coffee extraction with optimal aroma, body, and crema.

2 Cup and 1 Cup filter baskets

Included are 2 Cup and 1 Cup coffee filter baskets for making espresso in the commercial style where you grind coffee freshly for each cup. This achieves the best quality espresso where the grind consistency, dose, and compression are optimised for perfect espresso.

GREAT FUNCTIONALITY AND EASE OF USE


72 mm cup clearance for cappuccino cups

72 mm clearance between the drip tray and the centre of the filter-holder allows you to use two good sized cappuccino cups at once. The distance between the drip tray and filter-holder outlet is 67 mm. Suitable for use with two regular 150/180 mL cappuccino cups.

Able to accommodate one taller glass

Suitable for use with one 220/250 mL Duralex cafe latte glasses, 8oz takeaway cup, or 227 mL regular size KeepCup. Pavoni Lever machines can easily fit one larger glass or takeaway cup - in practice this is ideal for making that nice double ristretto for your morning cafe latte.

Water level indicator

View the water level quickly and easily. Left-hand side of the machine has a water level gauge allowing you to view the water level in the boiler. Always remember to fill the boiler before heating the machine.

Simple operation - just one switch

One switch turns the machine on and off. Once the machine is to pressure you control espresso brewing by raising a lowering the lever and steam operation by rotating the steam tap.

Generous 1.6 litre boiler

The boiler is the water supply on a La Pavoni lever machine. 1.6 litre boiler is good for making about 16 coffees - for a normal household this is good for a couple of days use. To refill the boiler - switch the machine off, purge the boiler pressure, let the machine cool down, open the boiler cap, and refill the boiler with water.

Easy to clean drip tray

THE LEVER DIFFERENCE - HOW A LA PAVONI LEVER MACHINE WORKS


The right temperature for beautiful espresso

Smart thermal design means the brass brew group and filter-holder absorb just enough heat from the boiler to maintain the right temperature for beautiful espresso. All modern La Pavoni lever machines use the 51mm brewing group which includes a thermal buffer between the boiler and brewing group to maintain a brewing group temperature around 92 degrees.

Turn on the machine with the lever down. The boiler will reach operating pressure first, then the brew group will gradually heat. Wait 10-20 minutes for the machine to successfully heat. The brew group will be too hot to touch when at operating temperature.

Your filter-holder also needs to be hot to make great espresso. Always keep the filter-holder engaged in the machine to keep it nice and hot - only remove the filter holder to load it with coffee.

Use high quality ground coffee beans

Great quality espresso requires the right amount or weight of high quality coffee beans, ground to the correct consistency, and compacted with the correct amount of pressure. Use the same care when preparing ground coffee for a lever machine as you would for preparing coffee for a commercial coffee machine.

Use high quality coffee. Use a high quality coffee grinder so you can adjust the ground particle size. Measure out the weight of ground coffee so you can be consistent with the weight or dose of coffee. Compress the ground coffee to create resistance to the flow of water.

Load your ground coffee into your heated filter holder and engage the filter holder into the machine before beginning the brewing process.

Lift the lever to for manual pre-infusion

Lift the lever to the maximum height - water from the boiler gently flows into the brewing group to wet the coffee, this is known as pre-infusion. The longer you leave the lever up - the longer the pre-infusion. For extra infusion lower the lever about 1/4 of its range - then lift the lever again to the maximum height to completely prime the brew group.

The right pressure

Lower the brew lever and you will feel the resistance increase until espresso begins to flow. If everything is perfect you will feel a firm positive resistance against the lever and a rich flow of espresso from the filter-holder outlets. Apply greater force to the lever for faster extraction and greater pressure; apply less force for a slower extraction with lower pressure.

The beauty of the lever machine is it gives you the feedback to know if your espresso setup is correct. If the coffee is ground too fine the lever will be very difficult to move; if the coffee is not ground fine enough operating the lever will provide minimal resistance and the coffee will be weak and watery.

Pressure profile for excellent espresso

Many highly complex and expensive modern espresso machines try to imitate and emulate the pressure profile of the lever espresso coffee machines because this pressure profile delivers excellent tasting espresso. 

Extraction or brewing begins from 1 bar or atmosphere of pressure - as the lever is lowered brew pressure increases to over 9 bar where the water pressure overcomes the resistance of the ground coffee. 

Pressurised and heated water forces the flavour filled oil from the ground coffee to produce espresso. The high pressure at the start of the brewing process extracts the flavour filled oil from the ground coffee for around 15 seconds.

Towards the end of the extraction process the pressure naturally drops (a characteristic of lever machines) - this lowering of pressure helps to avoid extraction of undesirable flavours.

HOW TO GET THE BEST OUT OF YOUR LA PAVONI LEVER ESPRESSO COFFEE MACHINE


Let the machine heat up

We recommend letting the machine heat up for 10-20 minutes to allow the brewing group and filter holder to reach operating temperature. If your first espresso is not good, it usually means the machine has not heated up correctly - let it heat up a little longer. The first espresso should always be excellent if the machine is sufficiently heated. Remember to keep the filter-holder engaged in the brewing group so it can reach the correct operating temperature.

Use freshly ground coffee

As soon as coffee is ground it begins to oxidise and lose flavour. Pre-ground coffee will not produce great results with any proper espresso machine and lever machines are no different. We recommend to grind your coffee fresh for each cup to maximise flavour and quality. Using a coffee grinder also allows adjustment of the grind setting to optimise results.

High quality burr coffee grinder is a must

Adjusting the coffee grind size allows you to adjust the density of the ground coffee. A high quality burr coffee grinder allows your to adjust the ground coffee particle size. If the lever lowers with minimal resistance then we suggest setting the grinder to a finer setting. If the lever is very difficult to lower then we suggest moving the less fine grind setting.

Feel how the coffee is extracting

Lever machines give excellent feedback on your espresso by how the lever fells during brewing. The beauty of the lever machine is it gives you the feedback to know if your espresso setup is correct. If the coffee is ground too fine the lever will be very difficult to move; if the coffee is not ground fine enough operating the lever will provide minimal resistance and the coffee will be weak and watery.

Release pressure in between brewing

After brewing there will be considerable pressure in the filter holder. We recommend waiting five minutes before removing the filter-holder.

Keep the filter holder and coffee filter basket clean

Stale coffee residue will make your espresso taste bad, we recommend regular cleaning of the filter-holder and coffee filter basket with coffee machine cleaner.

Do not get the wood handles wet or immerse them in water

When cleaning the filter holder do not immerse the wood handle in water as this will cause the wood to split and fade.

 

ABOUT LA PAVONI


La Pavoni (La Pavoni Spa) was founded in a little workshop at Via Parini, Milan, Italy in 1905 by Desiderio Pavoni. The concepts behind the first LA PAVONI were patented in 1902 by Luigi Bezzera and registered at the Milan State office in 1903 - Mr Desiderio Pavoni purchased these patents and began to develop the LA PAVONI "Ideale" in 1905. LA PAVONI Ideale was the first modern espresso coffee machine on the market  - it incorporated many new and unique features that have remained features of espresso coffee machines over 100 years later - filter-holders used to contain ground coffee, a heated boiler kept at constant pressure by gas or electricity, and pressurised water forced through the coffee to brew or extract espresso.

The real revolution of this first LA PAVONI espresso coffee machine was speed - espresso literally translates as "expressed" - this new coffee machine reduced preparation time from a few minutes to one minute. The LA PAVONI Ideale coffee machine, which made continuous shots of coffee (so called ‘espresso’), was instrumental in spreading the fashion for drinking Italian style espresso coffee at the bar to the world.

In 1961 again LA PAVONI achieved a first with the release of the Europiccola - the first electrical espresso coffee machine for household use. The Europiccola allowed you to brew espresso and steam milk at home. In 1977 this concept was developed into the Europiccola Professional with an enlarged 1.6 L boiler and pressure gauge. Over 50 years later the Europiccola is still in production - a testament to the quality of that original design.

Over 100 years since its beginning LA PAVONI continues to develop and produce espresso coffee machines for the commercial and household markets. As one of the original espresso machine manufacturers LA PAVONI is characterised by traditional craftsmanship - quality materials, timeless design, hand assembly, and Italian quality.

    Love the simplicity, not as hard to use as you may think, makes fantastic coffee. Expensive though.
