HOW TO USE

Fill the jug approximately half way or slightly less with good quality cold milk.   Milk straight from the fridge is ideal.   Insert the steam wand below the surface of the milk and open the steam tap. Gently lower the pitcher until you start to 'foam' the milk by injecting volume into the milk.   After a few seconds (how long will depend on how much steam your machine delivers) the volume of milk will increase.   Before the milk reaches the top of the jug, raise the pitcher to immerse the steam wand into the milk.   Position the pitcher so that the flow of steam creates a mixing action.   Heat to your desired temperature, then shut off the steam before removing the pitcher.   Now you are ready to create your caffe latte, cappuccino, flat white, etc.

BUYING GUIDE

When selecting a jug for frothing milk there are a few things to keep in mind:

Select the right volume for the job

Steamed milk will roughly double in volume as you stretch the milk to create milk foam - to stop the milk overflowing you want to half fill your milk steaming jug before steaming the milk. Aim for about 250mL - 300mL of volume size per cup.

Find a pitcher with a good spout

A good spout allows you to pour the milk in a nice narrow accurate stream and create a good consistent texture in the finished drink. Pitchers with a lip or no spout make it difficult to control the flow of milk often resulting in nasty big bubbles in the finished product.   Look at what the professionals use, go with a nice narrow spout.

Stainless steel

Experienced baristas can dispense with using a thermometer and will steam the milk by 'feeling' the temperature through the jug. A pitcher constructed from glass, plastic, or ceramic makes it difficult to determine the milk temperature by feel, often this will leading to 'scalded' milk that is flat and lifeless. Stainless steel is one of the best materials for a milk jug as it conducts heat from the liquid to the exterior almost instantly.

QUICK TIP

Keep your milk pitcher nice and cold otherwise it will preheat your cold milk, so its best not to leave the pitcher on top of your espresso machine or anywhere hot.   Some people even leave their pitchers in the fridge/freezer and claim they get better results.  Try it and see how you go.   Enjoy!
